Pasta salad with green beans, pine nuts, and Parmesan
Ingredients
- Chinese green beans 5 oz
- Coarse Salt to taste
- Chinese green beans 5 oz
- Ground Black Pepper to taste
- Conchiglie Pasta 20 oz
- Meyer Lemon Juice ¼ cup
- Olive Oil ½ cup
- Grated Lemon Zest ½ teaspoon
- Toasted Sesame 0 oz
- Parmesan Cheese 0 oz
- Grated Pecorino Pepato Cheese 0 oz
- Arugula 0 oz
Step-by-Step Guide
Step 1
Blanch the green beans in boiling water or a double boiler until tender, about 4 minutes. Transfer to ice water for a moment, drain, dry, and cut into small pieces.
Step 2
In the bean water, cook the pasta until al dente. Drain and cool. Transfer to a bowl.
Step 3
In the bowl, mix the lemon zest, juice, and 0.75 teaspoons of salt. Season with pepper and whisk in the oil. Drizzle over the pasta and toss.
Step 4
Add the beans, pine nuts, and grated Parmesan. Toss to combine.
Step 5
Before serving, fold in the arugula and sprinkle with shaved Parmesan.
