Pasta Salad with Chicken and Blueberries
Ingredients
- Chicken fillet 20 oz
- Pasta shells 10 oz
- Olive Oil 3 tablespoons
- Shallot 1 piece
- Chicken Broth 5 fl oz
- Feta cheese 5 fl oz
- Lime Juice 3 tablespoons
- Fresh Berries 1 cup
- Chopped Sage Leaves 1 teaspoon
- Salt to taste
- Grated Lemon Zest 1 teaspoon
Step-by-Step Guide
Step 1
Cook the chicken by any method: boil, grill, or roast. Let it cool slightly, transfer to a cutting board, and cut into small pieces.
Step 2
Meanwhile, boil the pasta in a large pot of salted boiling water until cooked, drain, and transfer to a bowl.
Step 3
In a skillet, sauté the thinly sliced shallot in olive oil until soft, about 3–4 minutes. Pour in the broth and add the feta and lime juice. Let it melt slightly for 1–2 minutes.
Step 4
Add the chicken to the pasta and mix in the sauce, blueberries, thyme, and lime zest. Season with salt and mix well.
