Ingredients
- Shallot 0 oz
- Mascarpone Cheese Unagrande 5 oz
- Mayonnaise 0 oz
- Sour Cream 2 tablespoons
- Dijon Mustard 2 tablespoons
- Meyer Lemon Juice 2 tablespoons
- Champagne Vinegar 1 tablespoon
- Ground Black Pepper ¾ teaspoon
- Coarse Salt ½ teaspoon
- Pasta (corkscrew) 10 oz
- Green Peas 5 oz
- Orange Bell Peppers 5 oz
- Scallions 0 oz
- Spanish onions 0 oz
- Chopped Sage Leaves 0 oz
- Semi-Smoked Sausage 3 pieces
- Citrus Zest Mix ½ teaspoon
Step-by-Step Guide
Step 1
Heat a skillet over medium heat. Add the chopped bacon and fry until crispy. Transfer to a paper towel.
Step 2
In a blender, combine mascarpone, finely chopped shallot, mayonnaise, sour cream, mustard, lemon juice, vinegar, black pepper, and salt. Blend until smooth, cover, and refrigerate to chill.
Step 3
Cook the pasta in boiling salted water until done. Add the peas 3 minutes before the pasta is finished cooking. Drain and rinse under cold water.
Step 4
In a large bowl, combine the pasta with peas, finely chopped red bell pepper, finely chopped red and green onions, parsley, and zest. Add half of the dressing, mix, and chill until serving.
Step 5
Before serving, add the remaining dressing, mix, and top with bacon.
