Pasta Salad
Ingredients
- Pasta shells 20 oz
- Olive Oil 6 tablespoons
- Sun-Dried Tomatoes 5 oz
- Malt Vinegar 2 tablespoons
- Capers 1 tablespoon
- Garlic 1 clove
- Potato 1 piece
- Fresh basil leaves 1 cup
- Melted Cheese 10 oz
- Pitted olives 1½ cups
- Grated Pecorino Pepato Cheese 5 oz
Step-by-Step Guide
Step 1
In a blender, blend olive oil, tomato, vinegar, capers, and garlic until finely chopped.
Step 2
Cook the pasta al dente in salted water. Drain and place in a large bowl. Mix with the prepared sauce. Let cool and stir occasionally.
Step 3
In the cooled salad, add diced fresh tomato, mozzarella in pieces, basil, grated parmesan, and olives. Mix well. Add salt and pepper to taste.
