Pak Choi, Carrot, and Apple Salad
Ingredients
- Pak choi salad 20 oz
- Coarse Salt to taste
- Apple 1 piece
- Carrot 2 pieces
- Meyer Lemon Juice 3 tablespoons
- Grated Ginger Root 1 teaspoon
- Vegetable Oil 1 tablespoon
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut each head of pak choi in half and thinly slice. Transfer to a colander, generously salt, cover with a weight, and let sit for a while.
Step 2
Core the apple and cut it into thin strips. Peel the carrot and grate it on a coarse grater.
Step 3
In a large bowl, mix the apple, carrot, lemon juice, vegetable oil, and ginger. Add the pak choi, season with salt and pepper. Mix well.
