Orange Salad with Chicken
Salads • European
Description
The proportions of the ingredients can be adjusted to your taste: I prefer to lean towards greens and fruits; those who favor truly 'manly' salads will gladly replace one orange with an extra piece of chicken breast.
Ingredients
- Oranges 2 pieces
- Skin-On Chicken Breasts 5 oz
- Fresh basil leaves 1 bunch
- Light Raisins, Seedless 0 oz
- Meyer Lemon Juice 0 fl oz
- Date honey 0 oz
- Salt a pinch
- Flaxseeds 0 oz
- Olive Oil 0 fl oz
Step-by-Step Guide
Step 1
Boil a small piece of chicken breast (1 medium piece is enough), peel, cut into pieces, and season with salt.
Step 2
Remove the zest from the oranges, break them into segments, and remove the seeds. Ideally, peel off the membranes from each segment and cut them in half.
Step 3
Wash and tear the spinach leaves by hand, or instead of spinach, chop parsley/dill/other greens.
Step 4
Rinse the raisins with hot water. Mix with all the previous ingredients. Add the flax seeds (you can soak them in boiling water beforehand).
Step 5
Prepare the dressing separately: mix lemon juice (orange juice can be used), vegetable oil, and honey. Dress the salad and serve it as a complete nutritious dish.
