Olivier salad with shrimp, avocado, and homemade mayonnaise
Ingredients
- Peeled Cooked Shrimp 5 oz
- Avocado 2 pieces
- Carrot 2 pieces
- Cucumbers 2 pieces
- Canned Mushroom Soup 1 can
- Chicken Egg 2 pieces
- Onion 1 head
- Cashew 1 glass
- English Dry Mustard 1 tablespoon
- Champagne Vinegar 1 tablespoon
- Garlic to taste
- Meyer Lemon Juice 1 tablespoon
- Ocean salt to taste
- Ground Black Pepper to taste
- Olive Oil 3 spoons
Step-by-Step Guide
Step 1
Boil and peel the carrots, shrimp, and eggs. Cut the carrots into small cubes, peel and pit 1 avocado, and cut it into small cubes, just like the fresh cucumber. Add canned peas, finely chopped onion, salt, and mayonnaise.
Step 2
To make the mayonnaise, rinse 1 cup of raw cashews and soak them in cold water for 2–3 hours. Then, drain the water and place the cashews in a blender along with all the other ingredients. Blend until smooth. If needed, add 1 tablespoon of cold water.
