Ingredients
- Tequila 15 fl oz
- Lime Juice 0 qt
- Agar-Agar 0 oz
- Sage 0 oz
- Sugar 10 oz
- Water 10 fl oz
- Olive Oil 5 fl oz
- Rosemary 0 oz
- Thyme 0 oz
- Pasilla Pepper 0 oz
- Cardamom 0 oz
Step-by-Step Guide
Step 1
Pour the spices (feel free to adjust them to your taste) with olive oil and let them steep for a week.
Step 2
Squeeze the lime juice and strain it through a sieve. Measure 100 ml into a saucepan and add agar-agar. Stir vigorously until characteristic bubbles appear, then pour in the remaining juice, mixing thoroughly. Transfer to a container and place in the refrigerator. Once the juice has frozen, place it in a sieve lined with a waffle towel and leave at room temperature. After straining, you should have a completely clear liquid.
Step 3
Prepare a sugar syrup by taking equal parts sugar and water and melting them together. Allow to cool.
Step 4
Gently scorch fresh sage with a torch to enhance its aroma. Place it in a saucepan along with the sugar syrup, blend until smooth, and bring to a boil, but do not let it boil. Cover the saucepan with foil. Let it cool. Strain the resulting syrup through double-layered cheesecloth.
Step 5
Combine the sage syrup and clarified lime juice in a 1:1 ratio to create a lime-sage cordial.
Step 6
For one serving of the cocktail, pour 40 ml of tequila and 40 ml of cordial into a mixing glass, stir with ice. Strain into a cocktail glass and garnish with two drops of aromatic oil.
