Ingredients
- Mussels 20 oz
- Marinated cherries 10 oz
- Mixed salad greens 5 oz
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil 3 tablespoons
- Meyer Lemon Juice ½ tablespoon

Step 1
Boil the mussels in salted water. Discard any mussels that do not open. Drain the water.
Step 2
Cut the tomatoes into halves or quarters. Arrange the salad greens, mussels, and tomatoes.
Step 3
Mix the oil with salt, pepper, and lemon juice. Drizzle over the salad.
