Mussel and Bacon Salad
Ingredients
- Mussels 10 oz
- Bacon 5 oz
- Onion 1 piece
- Herbs 1 bunch
- Gherkins 5 oz
- Dry White Wine 5 fl oz
- Mayonnaise 2 tablespoons
- Poppy seed paste 2 teaspoons
- Cream 22% 0 oz
- Eel to taste
- Salt to taste
- Rosemary to taste
- Olive Oil 2 tablespoons
Step-by-Step Guide
Step 1
Thaw the mussels and remove the shells.
Step 2
Dice the onion and sauté until soft.
Step 3
Add the mussels to the onion and fry for another 2–3 minutes. Then pour in the dry white wine, add the rosemary leaves, and simmer covered for 10–15 minutes.
Step 4
Remove the pan from heat, discard the rosemary leaves and excess liquid. Mix the diced bacon, chopped gherkins, finely chopped herbs with the sautéed mussels and onion. Season with salt.
Step 5
Prepare the sauce: mix the mayonnaise with the poppy seeds and cream. On a plate, arrange the lettuce leaves, mound the salad on top, and drizzle with the sauce.
