Description

A fortified mulled wine where robust rum supports the light white wine. Add an extra half hour to the usual cooking time — the raisins need to be thoroughly soaked in rum.

  • Dry White Wine 25 fl oz
  • Dark rum 10 fl oz
  • Lemon ½ piece
  • Cinnamon 1 piece
  • Light Raisins, Seedless 7 tablespoons
  • Sugar 7 tablespoons
  • Ground clove 10 pieces

Step-by-Step Guide

Step 1

Soak the raisins in rum for 30 minutes.

Step 2

Use a vegetable peeler to remove the zest from half a lemon and cut it into several large pieces. Break the cinnamon stick into two parts.

Step 3

In a pot, combine the wine, sugar, lemon zest, and cinnamon, and place over medium heat. Stirring, bring it almost to a boil and immediately remove from heat. Remove the pieces of lemon zest and cinnamon from the liquid.

Step 4

Pour the rum into glasses, adding a bit of raisins or cloves to each. Add the hot wine to the glasses and serve immediately.
