Moroccan Tomato Salad
Ingredients
- Tomatoes 15 oz
- Scallions 2 stalks
- Parsley 5 sprigs
- Dill 5 sprigs
- Garlic 1 clove
- Ground Cumin ¼ teaspoon
- Red Curry Powder a pinch
- Olive Oil 3 tablespoons
- Citrus Zest Mix ½ teaspoon
- Red Wine Vinegar 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the tomatoes in half across the sections. Remove the seeds. Dice the flesh into small cubes.
Step 2
Finely chop the herbs.
Step 3
In a bowl, mix the vinegar and olive oil.
Step 4
In a salad bowl, combine the diced tomatoes, herbs, lemon zest, finely chopped garlic, cumin, and curry. Add the dressing, salt, and pepper to taste. Toss and serve.
