Ingredients
- Cilantro 1 bunch
- Courgette 1 piece
- Eggplants 1 piece
- Olive Oil 1 tablespoon
- Garlic 1 clove
- Quinoa 10 oz
- Cinnamon 1 tablespoon
- Lemon 1 piece
- Fresh Mint 2 bunches
- Avocado 2 pieces
- Raisins 3 tablespoons
- Scallions 3 stalks
- Chopped almonds 0 oz
- Salt to taste
Step-by-Step Guide
Step 1
Slice the zucchini and eggplant into rounds, grill them or cook on a grill pan. Place them in a large bowl, drizzle with olive oil and garlic, season with salt, and set aside.
Step 2
Cook the quinoa (using 1.5 times the amount of water), adding cinnamon. Once the quinoa is ready, fluff it and let it cool for a bit. After some time, add lemon juice and olive oil to taste.
Step 3
Chop half of the mint and cilantro, and add them along with the raisins to the quinoa, mixing well.
Step 4
Cut the avocado into small pieces and chop the green onions finely. Chop the almonds and season with salt. Combine everything in one bowl and serve.
