Moroccan Chickpea and Couscous Salad
Ingredients
- Couscous 1 cup
- Light Raisins, Seedless 0 oz
- Olive Oil 3 tablespoons
- Chicken Broth 1¼ cups
- Garlic 1 clove
- Meyer Lemon Juice 2 tablespoons
- Ground Cumin 1 teaspoon
- Ground coriander 1 teaspoon
- Grated Ginger Root ½ teaspoon
- Salt 1 teaspoon
- Carrot 1 piece
- Orange Bell Peppers ½ piece
- Chickpea 1 cup
- Spanish onions ¼ head
- Chopped Sage Leaves 2 tablespoons
Step-by-Step Guide
Step 1
In a bowl, combine raisins and couscous and pour boiling broth over them. Cover and let sit for 5 minutes.
Step 2
In a small jar, mix olive oil, lemon juice, minced garlic, spices, and salt. Close the lid and shake well.
Step 3
Fluff the couscous with a fork and add the peeled and grated carrot, finely chopped bell pepper and onion, chickpeas, and parsley. Pour the dressing over and mix well.
