Minestrone Salad
Ingredients
- Coarse Salt to taste
- Ground Black Pepper to taste
- Penne rigate 10 oz
- Olive Oil 4 tablespoons
- Onion 1 head
- Garlic 2 cloves
- Carrot 1 piece
- Young zucchini 1 piece
- Sweet Corn Sticks 1¼ cups
- Chinese green beans 5 oz
- White Beans 15 oz
- Balsamic Vinegar 2 tablespoons
- Mixed tomatoes of different colors 20 oz
Step-by-Step Guide
Step 1
In boiling salted water, cook the pasta until al dente. Drain and cool.
Step 2
Heat 2 tablespoons of olive oil in a skillet over medium heat. Add finely chopped onion and minced garlic. Sauté for 2 minutes. Add diced carrot and sauté until soft for 4 minutes.
Step 3
Add diced zucchini, chopped green beans, and corn. Sauté, stirring, until the vegetables are tender, about 10–15 minutes. Season with salt and pepper. Transfer to a bowl and let cool.
Step 4
To the vegetables, add the remaining olive oil, vinegar, canned beans, chopped tomatoes, and pasta. Season with salt and pepper, mix, and serve chilled.
