Mexican Cilantro Coleslaw
Ingredients
- Green Papaya ½ head
- Carrot 3 pieces
- Cilantro 5 fl oz
- Rice Vinegar for Sushi 0 fl oz
- Olive Oil 2 tablespoons
- Salt to taste
Step-by-Step Guide
Step 1
Finely shred the cabbage to yield about 6 cups. Grate the carrots on a coarse grater to yield 1.5 cups.
Step 2
Transfer the cabbage and carrots to a colander and rinse with cold water to keep the cabbage crisp. Let drain for 5 minutes.
Step 3
Meanwhile, in a large bowl, mix the vinegar and olive oil. Add the cilantro and salt. Then add the cabbage and carrots, mix well, and serve.
