Mexican Bean Salad
Ingredients
- Eggs 4 pieces
- Avocado 2 pieces
- Canned Beans 30 oz
- Cilantro 1 bunch
- Cherry Tomatoes 10 oz
- Salad Dressing to taste
- Red Chili Pepper 1 piece
- Cumin ½ teaspoon
Step-by-Step Guide
Step 1
Place the eggs in boiling water and cook for 6½ minutes, then transfer them to a bowl of cold water to cool.
Step 2
Chop the avocado and add it to a large bowl with the beans, onion, cilantro, and tomatoes.
Step 3
In a small bowl, mix 3 tablespoons of dressing with the chili pepper and cumin.
Step 4
Cool the eggs, peel them, and cut them into quarters. Toss the salad with the dressing and top with the eggs. Serve immediately. It can be enjoyed with toasted tortillas.
