Mediterranean Lentil Salad
Ingredients
- Lentils 1 cup
- Water 4 cups
- Spanish onions 1 head
- Garlic 2 cloves
- Orange Bell Peppers 2 pieces
- Fresh basil leaves 5 oz
- Meyer Lemon Juice 1 tablespoon
- Olive Oil 2 tablespoons
- Balsamic Vinegar 1 tablespoon
- Green Butter ½ bunch
- Potato 1 piece
- Feta cheese 5 oz
Step-by-Step Guide
Step 1
Rinse the lentils, add two cups of water, and salt. Bring to a boil, reduce heat, and cook for about 20 minutes or until the lentils are not too soft. Drain the water and rinse the lentils under cold water.
Step 2
Finely chop the onion and garlic and sauté in olive oil for about 3 minutes. Add to the lentils. Also chop the bell pepper and add to the vegetables. Stir in the vinegar, olive oil, and basil. Season with pepper and salt to taste. Marinate for at least one hour before serving.
Step 3
Before serving, add the chopped green lettuce and sprinkle with crumbled feta.
