
Mediterranean Cucumber Salad

Ingredients
- Kalamata olives 10 pieces
- Cucumbers 3 pieces
- Lemon ½ piece
- Scallions ½ bunch
- Balsamic Vinegar 1 tablespoon
- Mint ½ bunch
- Olive Oil 3 tablespoons
- Salt to taste
Step-by-Step Guide
Step 1
Crush the Kalamata olives with the flat side of a knife, remove the pit, and tear them into two pieces.
Step 2
Place the olives in a salad bowl and drizzle with balsamic vinegar to let them marinate a bit.
Step 3
Meanwhile, finely chop the green onions, tear the mint leaves, and chop them roughly. Set aside some mint leaves for garnish.
Step 4
Using a fork, make longitudinal stripes on the cucumbers on all four sides to help them absorb more juice.
Step 5
Cut the cucumbers into quarters lengthwise and then into pieces about 2 cm thick. The pieces should be large enough to absorb the juices while still retaining the cucumber's flavor.
Step 6
Add the cucumbers and herbs to the olives, 1 tablespoon of fresh lemon juice, and olive oil, and mix well.
Step 7
Garnish with fresh mint leaves on top.
