Marinated Goose Salad with Fig
Ingredients
- Coarse Salt 3 spoons
- Thyme 6 stalks
- Garlic 4 cloves
- Shallot 1 head
- Ground Black Pepper to taste
- Duck Fat 30 oz
- Arugula 5 oz
- Olive Oil 0 fl oz
- Black Fig 8 pieces
- Goose Leg 4 pieces
- Balsamic Vinegar 3 spoons
Step-by-Step Guide
Step 1
Rub the goose legs with salt, chopped thyme, garlic, shallots, and ground pepper, and place them in a dish. Cover and refrigerate for 12 hours.
Step 2
Preheat the oven to 210°F. Rinse the legs and pat them dry. Return them to the baking dish. Arrange the fat around the legs and roast until tender for five hours. Let cool.
Step 3
Remove the legs from the fat, discard the skin and bones. Slice the meat, then toss it with arugula, oil, vinegar, chopped figs, and pepper.
