Ingredients

  • Rum 0 qt
  • Mango 15 oz
  • Lemongrass 5 oz
  • Caramel Syrup 5 fl oz

Step-by-Step Guide

Step 1

Thoroughly wash and dry the jar for infusion.

Step 2

Peel the dry outer layers from the lemongrass stalk and cut it down to fit easily into the jar.

Step 3

Gently bruise the lemongrass with the handle of a knife or something similar until it splits. Place it in the jar.

Step 4

Peel the mango, remove the pit.

Step 5

Cut the mango flesh into large pieces and place them in the infusion container.

Step 6

Pour the rum and simple syrup into the jar.

Step 7

Seal the jar and shake it several times. You can also gently stir the contents with a long spoon.

Step 8

Store the jar in a dark place (for example, in a kitchen cabinet). Leave it at room temperature for 21 days.

Step 9

Every 1-2 days, take the jar out and shake it.

Step 10

After 21 days, strain the infusion through several layers of cheesecloth or a thin cotton cloth.

Step 11

Pour the infusion into bottles and seal them.

Step 12

Let the infusion sit for another 14 days before starting the tasting.
