Low-Calorie Caesar Salad
Ingredients
- Chicken fillet to taste
- Croutons 20 pieces
- Iceberg Lettuce to taste
- Natural Yogurt 1 cup
- Garlic ½ clove
- Grated Pecorino Pepato Cheese to taste
Step-by-Step Guide
Step 1
First, grill the chicken in a grill pan without adding oil (I do not recommend cooking the breast whole; it’s better to cut it in half across and grill for 3–4 minutes on each side). You can add a couple of rosemary leaves for flavor.
Step 2
While the chicken is grilling, prepare the sauce. Simply mix all the ingredients (yogurt, cheese, garlic) — the garlic should be finely chopped.
Step 3
In a salad bowl, toss in the lettuce leaves, sliced chicken, and pour the sauce over everything. Next, prepare the croutons. I make them in a special toaster (similar to a mini-oven), but if you don’t have one, you can fry them in a pan.
Step 4
Serve the salad on plates and sprinkle with croutons on top.
