Lobio with Beans
Ingredients
- Fresh Cilantro 1 bunch
- Onion 3 heads
- Red Beans 20 oz
- Garlic 1 head
- Salt to taste
- Chili Pepper 1 piece
- Bay leaf 1 piece
- Vegetable Oil 1 tablespoon
- Parsley 1 bunch
Step-by-Step Guide
Step 1
Rinse the beans, cover with cold water, and let soak overnight. In the morning, drain the water, cover the beans with fresh cold water, and place the pot over medium heat. Bring to a boil, skim off the foam, add a little salt, and let cook using a water lock. Cooking time directly depends on the quality of the beans and the heat intensity, averaging about 1.5 hours.
Step 2
In a skillet, sauté the finely chopped onion and half of the minced garlic. You can sauté either in vegetable oil or in a dry skillet, as desired.
Step 3
Mash part of the cooked beans with a potato masher into a coarse puree, without draining the water. Combine with the whole beans, add the sautéed onion and garlic, spices, crumbled chili pepper, and bay leaf.
Step 4
Bring to a boil. Add the chopped cilantro and parsley, the remaining minced garlic, mix everything, and let steep under a lid.
