A salad made of leafy greens, liver, and a sweet honey dressing is such a familiar and ordinary dish that it probably wasn't worth retelling the same old story for the hundredth time. But that’s only if the retelling isn’t done by John Smith, who is known not only as the creator of Gourmet Pizza but also as someone who enjoys perfecting even the most seemingly tired recipes (just look at his 'Incredibly Delicious Instant Noodles'). And with this salad, it turned out to be anything but ordinary: tomatoes, fried liver, greens, all the usual ingredients, but the dressing is unique—an Asian-style dressing with a zesty ginger note, in which the liver caramelizes beautifully. Another great detail is the crushed hazelnuts sprinkled on top. The crunchiness and contrast with the tender liver is simply delightful.
Ingredients
- Honey 0 oz
- Champagne Vinegar 0 fl oz
- Thyme 1 sprig
- Soy Sauce 0 fl oz
- Ginger 0 oz
- Mild Chili Spice ½ pieces
- Chicken Liver 5 oz
- Mixed salad greens to taste
- Hazelnut 0 oz
- Tomatoes 5 oz
- Olive Oil 0 fl oz
- Vegetable Oil 0 fl oz
- Salt to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Peel and chop the ginger.
Step 3
Finely chop the chili pepper.
Step 4
In a saucepan, combine honey and 50 ml of water. Add white wine vinegar, soy sauce, ginger, chili pepper, and a sprig of thyme.
Step 5
Bring the mixture to a boil and simmer on low heat until the sauce thickens to a syrup-like consistency and the acidity of the vinegar disappears. This will take about 5–7 minutes. Taste the finished sauce and add more soy sauce or salt if necessary.
Step 6
Clean the liver of any membranes. Heat a little vegetable oil in a skillet and quickly fry the liver for about a minute on each side.
Step 7
Add the sauce to the liver and caramelize the liver in it for a few more minutes.
Step 8
Transfer the liver to a plate and drizzle with the sauce from the skillet.
Step 9
Place your favorite salad greens and a delicious tomato nearby, lightly drizzling them with olive oil.
Step 10
Garnish the salad with chopped hazelnuts and serve.
