Liver and Tzatziki Sandwich
Sandwiches • Author's
Description
The sandwich is made from liver pancakes. They contain very little flour, but a splash of sesame oil is added — this softens the slightly bitter taste of chicken liver, giving it a sweet and smoky note reminiscent of toasted seeds. In contrast to the rich flavor of the pancakes, a cold tzatziki sauce is used — it's a Greek yogurt dressing that refreshes and enhances the flavors of any hot dish you choose to add it to. The rest is a classic sandwich combination: chopped tomatoes and lettuce leaves. Chef John Smith has created a restaurant-style version of this portable meal that can be prepared daily if you have a blender.

Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Prepare the tzatziki. To do this, grate the cucumber and squeeze out the excess moisture.
Step 3
Mix Greek yogurt, cucumber, and chopped cilantro. Add lemon juice and garlic, minced. Season with salt and pepper, and adjust to taste.
Step 4
Clean the liver of any slime and membranes. Transfer the liver to a blender and chop it.
Step 5
Add toasted sesame seeds and sesame oil to the blender. Season with salt and pepper.
Step 6
Grease a cold skillet with butter and spoon the blender mixture into it to form small pancakes.
Step 7
Fry the pancakes on both sides. Repeat the same process with the remaining batter.
Step 8
Toast the bread in a dry skillet or a toaster.
Step 9
Spread some tzatziki on one slice of bread. Next, add the liver patties, a lettuce leaf, a couple of slices of tomato, and a bit more tzatziki.
Step 10
Cover with the second half of the bread, cut the sandwich in half, and serve.
