Description

The sandwich is made from liver pancakes. They contain very little flour, but a splash of sesame oil is added — this softens the slightly bitter taste of chicken liver, giving it a sweet and smoky note reminiscent of toasted seeds. In contrast to the rich flavor of the pancakes, a cold tzatziki sauce is used — it's a Greek yogurt dressing that refreshes and enhances the flavors of any hot dish you choose to add it to. Prepare all the ingredients.

Prepare the tzatziki. To do this, grate the cucumber and squeeze out the excess moisture.

Mix Greek yogurt, cucumber, and chopped cilantro. Add lemon juice and garlic, minced. Season with salt and pepper, and adjust to taste.

Clean the liver of any slime and membranes. Transfer the liver to a blender and chop it.
