Light vegetable salad with arugula and Napa cabbage
Ingredients
- Tomatoes 2 pieces
- Red cocktail cherry 10 pieces
- Orange Bell Peppers 2 pieces
- Olive Oil to taste
- Napa Cabbage 1 head
- Meyer Lemon Juice to taste
- Salt to taste
- Dill to taste
- Arugula to taste
Step-by-Step Guide
Step 1
Wash and dry the vegetables.
Step 2
Carefully remove the core from the large tomatoes and cut the tops off the cherry tomatoes. Clean the bell pepper.
Step 3
Cut the cherry tomatoes in half. Slice the large tomatoes into thin wedges.
Step 4
Dice the bell pepper.
Step 5
Shred the Napa cabbage. Mix all the ingredients together.
Step 6
Tear the arugula by hand and add it to the salad.
Step 7
Prepare a dressing separately using olive oil and salt.
Step 8
Drizzle the salad with fresh lemon juice to taste, pour over the dressing, mix well, and let it sit for a bit.
Step 9
Serve the fresh salad on a plate and garnish with dill.
