Light Thai Beef Salad
Ingredients
- Cilantro ½ cup
- Beef 20 oz
- Salt ½ teaspoon
- Sweet Chili Sauce 1½ teaspoons
- Rice 1½ tablespoons
- Lime Juice ¼ cup
- Brown Sugar 2 teaspoons
- Fish Oil 2 teaspoons
- English cucumber 1 piece
- Mixed salad greens 4 cups
- Fresh Mint 0 oz
- Fresh basil leaves ½ cup
- Roasted Peanuts ¼ cup
Step-by-Step Guide
Step 1
Preheat the grill or barbecue.
Step 2
Cut the meat into 2 pieces and rub with 1 teaspoon of chili garlic sauce.
Step 3
Toast the rice in a well-heated pan until golden brown. Cool. Transfer to a grinder and grind to a powder.
Step 4
Meanwhile, place the meat on the grill and cook on both sides until done, about 4 minutes each side.
Step 5
In a small bowl, mix the lime juice, brown sugar, fish sauce, and remaining chili sauce.
Step 6
In a large bowl, combine the thinly sliced cucumber, salad greens, finely chopped mint, finely chopped cilantro, finely chopped basil, and half of the dressing. Divide the salad onto 4 large plates.
Step 7
Slice the meat thinly and place it on the salad. Sprinkle with rice powder, drizzle with the remaining dressing, and top with peanuts.
