Step 1

As always with salads, it's best to start from the end — that is, with the dressing. Take a bit of fresh herbs — let's say cilantro, parsley, dill, green onions, or whatever you have on hand — and chop them finely. Squeeze in some garlic, combine it with the other dressing ingredients, and mix thoroughly.
