Light mango salad with honey dressing

Ingredients

  • Mango 1 piece
  • Mixed salad greens 5 oz
  • Marinated cherries 12 pieces
  • Camembert cheese 0 oz
  • Parmesan Cheese 0 oz
  • Pistachios 2 tablespoons
  • Mint 2 stems
  • Olive Oil 4 teaspoons
  • Meyer Lemon Juice 2 teaspoons
  • Honey 1 teaspoon
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Peel the mango and cut it into slices. Arrange the salad greens, mango, and halved cherry tomatoes on plates.

Step 2

Cut the Camembert, Brie, or another soft cheese with a strong flavor into small pieces and add them to the plates. Grate the Parmesan using a vegetable peeler or a coarse grater and sprinkle it on top.

Step 3

Add the washed pine nuts and torn mint leaves on top of the salad.

Step 4

For the dressing, mix the olive oil, lemon juice, and honey until smooth. If the honey is too thick, you can briefly place the container near a heat source. Season the dressing with salt and pepper, and drizzle it appetizingly over the salad.
