- Scallions 4 pieces
- Garlic 2 cloves
- Butter 0 oz
- Red Wine Vinegar 1 tablespoon
- Olive Oil 1 tablespoon
- Orange Bell Peppers 1 piece
- Arugula 1 bunch
- Feta cheese 0 oz
Step-by-Step Guide
Step 1
Cook green lentils with finely chopped green onion tops, garlic, and a piece of butter in chicken broth.
Step 2
Cool down and drain the broth if necessary.
Step 3
Add red wine vinegar, olive oil, and roasted bell pepper. Add a handful of crumbled feta cheese (or brine cheese).
Step 4
Serve with arugula.
