Leafy Greens Salad with Bell Peppers and Peanut Dressing

Ingredients

  • Leafy Mustard 2 bunches
  • Orange Bell Peppers 1 piece
  • Carrot 2 pieces
  • Apple Cider Vinegar ¼ cup
  • Unsalted peanuts, shelled 0 oz
  • Vegetable Oil ½ cup
  • Brown Sugar 2 tablespoons
  • Coarse Salt to taste

Step-by-Step Guide

Step 1

Thinly slice the leafy greens to make about 10 cups and transfer to a bowl.

Step 2

Remove seeds from the bell pepper and cut it into thin strips. Add to the greens.

Step 3

Peel the carrots and cut them into thin strips or grate them coarsely. Add to the greens. Mix everything well.

Step 4

In a blender, combine the vegetable oil, vinegar, ¼ cup of peanuts, sugar, and a bit of salt. Blend until smooth. Adjust salt to taste.

Step 5

Pour the dressing over the salad and add the peanuts. Toss to combine.
