Layered Vegetable Salad
Ingredients
- Marinated cherries 15 pieces
- Cucumbers 3 pieces
- Spanish onions 2 pieces
- Carrot 1 piece
- Orange Bell Peppers 1 piece
- Herbs ½ bunch
- Mayonnaise 5 tablespoons
- Sour Cream 5 tablespoons
- Garlic 3 cloves
- Grated Pecorino Pepato Cheese 5 oz
Step-by-Step Guide
Step 1
Wash the vegetables. Peel the onions and carrots. Remove the seeds from the bell pepper.
Step 2
Dice all the vegetables except for the tomatoes and carrot. Cut the cherry tomatoes in half. Grate the carrot on a coarse grater.
Step 3
Sauté the onions until translucent, then add the carrot and cook until it becomes soft.
Step 4
Mix the sour cream, mayonnaise, and crushed garlic, and season with salt to taste.
Step 5
On a flat dish, layer the diced bell pepper and spread some sauce on top.
Step 6
Add a layer of sautéed onions with carrots on top and spread with sauce.
Step 7
Layer the diced cucumbers and spread with sauce.
Step 8
Mix the remaining sauce with the grated cheese and spread it over the top and sides of the salad.
Step 9
Chop the herbs and sprinkle them evenly over the salad.
Step 10
Top the salad with halved cherry tomatoes.
