Kissel from Dried Apples or Dried Apricots
Ingredients
- Pickled Apples 5 oz
- Sugar ¾ cup
- Potato protein 2 tablespoons
Step-by-Step Guide
Step 1
Sort and rinse the dried apples, place them in a pot, pour in 3.5 cups of hot water, and leave them for 2–3 hours. Then, in the same pot, bring the apples to a boil and simmer for 30 minutes.
Step 2
Strain the broth through a sieve into another pot, mash the apples, add them back to the broth, add sugar, mix everything, and bring to a boil.
Step 3
Thicken the resulting apple syrup with diluted potato starch. Kissel from dried apricots is prepared in the same way, but only 0.5 cup of sugar is needed.
