Description
Kissel is both a drink for chilly winter evenings and a standalone dessert. It can also be turned into a topping for pancakes or cheese curd fritters. In our recipe, kissel is made from cranberries and black currants, but the same can easily be done with strawberries, cherries, and other berries. It is important to thoroughly dissolve the starch to avoid any lumps.
Ingredients
- Cranberry 10 oz
- Red Currant 10 oz
- Sugar 10 oz
- Potato protein 0 oz
- Water 50 fl oz
Step-by-Step Guide
Step 1
Mash the berries with a pestle or spoon.
Step 2
Pour in a glass of cold water.
Step 3
Pass through a sieve.
Step 4
Pour the berry pulp with a liter of water, place it over heat, bring it to a boil, and simmer for 5 minutes.
Step 5
Then strain the broth.
Step 6
Add sugar to it and bring it back to a boil.
Step 7
Pour the starch into a glass of cold water and stir until smooth.
Step 8
Pour into the berry broth, bring to a boil again while whisking.
Step 9
Then pour in the berry juice and stir.
Step 10
Remove from heat, let it cool, and serve.
