Ingredients
- Bulgur 1 cup
- Tomatoes 2 pieces
- Orange Bell Peppers 1 piece
- Spanish onions 1 piece
- Lemon 1 piece
- Olive Oil to taste
- Parsley to taste
- Scallions to taste
- Fresh Mint to taste
Step-by-Step Guide
Step 1
Salt 2 cups of water, bring to a boil, and add bulgur.
Step 2
Cover with a lid, reduce heat, and cook for 10-15 minutes.
Step 3
Meanwhile, prepare the dressing: mix the juice of the lemon, oil (the same amount as the juice), salt, and pepper to taste.
Step 4
You can also chop the vegetables and herbs into cubes and mix them in a salad bowl.
Step 5
Remove the bulgur from heat, stir, cover with a lid, and let it sit. Finish preparing the vegetables.
Step 6
Add the dressing to the bulgur – not necessarily all of it, to taste (you can use only half). Stir and set aside to cool.
Step 7
Before serving, combine the bulgur with the vegetables and mix. Add more dressing if necessary.
