Karmag Red Rice Salad with Feta Cheese
Ingredients
- Black rice (imperial) 10 oz
- Shallot 2 heads
- Feta cheese 5 oz
- Arugula 0 oz
- Scallions ½ bunch
- Salt 1 teaspoon
- Ground Black Pepper to taste
- Garlic 1 clove
- Mustard Greens 1 teaspoon
- Olive Oil 2 tablespoons
- Balsamic Vinegar 1 tablespoon
Step-by-Step Guide
Step 1
In a skillet, place the rice, add salt, and pour in 570 ml of boiling water. Bring to a gentle boil, cover, and cook on low heat for 40 minutes. Turn off the heat and let it sit for another 15 minutes.
Step 2
In a mortar, crush the garlic with 0.5-1 teaspoon of salt until it reaches a paste-like consistency. Add the mustard seeds and grind them. Incorporate the vinegar and a bit of black pepper. Pour in the olive oil and whisk all the ingredients together.
Step 3
Transfer the warm rice to a serving dish, drizzle with the dressing, mix, and let it cool. Add the shallots, arugula, and green onions. Before serving, sprinkle with crumbled feta cheese.
