Jicama and Apple Salad
Ingredients
- Garlic 2 cloves
- Cider ¼ cup
- Olive Oil 1½ tablespoons
- Dijon Mustard 2 teaspoons
- Apple Cider Vinegar 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
- Green Apples 10 oz
- Carrot 10 oz
- Jicama 20 oz
Step-by-Step Guide
Step 1
Peel the apples and carrot and grate them on a coarse grater until you have 1 cup each. Also, peel the jicama and grate it on a coarse grater until you have 2 cups.
Step 2
Heat a skillet over medium heat and sauté the unpeeled garlic cloves until soft, about 10 minutes.
Step 3
In a blender, combine the garlic flesh, cider, olive oil, mustard, vinegar, and a bit of salt and pepper. Blend until smooth.
Step 4
Transfer the vegetables and apple to a bowl and dress with the dressing. Toss to combine.
