Italian Salad with Sun-Dried Tomatoes

Ingredients

  • Sun-Dried Tomatoes 5 oz
  • Goat cheese 5 oz
  • Green Butter 1 stalk
  • Olive Oil 2 tablespoons

Step-by-Step Guide

Step 1

You can prepare sun-dried tomatoes yourself: take 'cream' tomatoes (keep in mind they will shrink to about 1/3 of their size) and cut them in half, scoop out the soft core, place them on a baking sheet, sprinkle with sea salt, Italian herbs (a mix), and pepper blend (a mix). No need to grease the baking sheet (you can place them directly on the sheet or on parchment paper). Place in a preheated oven (at 195°F) and dry for 5 to 8 hours at a temperature of 80–195°F. You need to feel the temperature yourself so that the tomatoes do not bake or dry out, but rather dehydrate. Once ready, place the tomatoes in a jar, add a little garlic, spices (optional), and olive oil (gently press the tomatoes down, the oil should just cover them).

Step 2

Place the cooled, prepared tomatoes in a salad bowl.

Step 3

Tear the lettuce leaves (to your taste: romaine, green, iceberg) and add them to the tomatoes. You can also add arugula or a mix of salad greens.

Step 4

Cut the soft feta cheese (I highly recommend 'Serbian Feta').

Step 5

Dress with olive oil.
