Italian Rice Salad with Spring Vegetables
Ingredients
- Rice 10 oz
- Frozen green bean pods 5 oz
- Asparagus 5 oz
- Chinese green beans 5 oz
- Scallions 4 stalks
- Spanish onions 1 head
- Artichoke bottoms 15 oz
- Orange Bell Peppers 1 piece
- Olives stuffed with lemon 10 pieces
- Dill 0 oz
- Parsley 0 oz
- Fresh Mint 0 oz
Step-by-Step Guide
Step 1
Rinse the rice in a sieve, then cook in salted water for 10–15 minutes.
Step 2
While the rice is cooking, finely chop the remaining salad ingredients.
Step 3
Boil the peas, beans, and asparagus in boiling water for a few minutes. Drain and immediately plunge into cold water to preserve the color of the vegetables.
Step 4
Dry the cooked vegetables on a towel, then add them to the rice with the onions, artichokes, olives, dill, parsley, and mint. Mix everything thoroughly — the salad is ready.
