Italian Pasta and Spinach Salad
Ingredients
- Pasta (corkscrew) 2½ cups
- Marinated cherries 2 cups
- Spinach 5 oz
- Melted Cheese 5 oz
- Onion 1 head
- Champagne Vinegar ¼ cup
- Chopped Sage Leaves 2 tablespoons
- Chopped Sage Leaves 1 tablespoon
- Olive Oil 2 tablespoons
- Salt ¼ teaspoon
- Ground Black Pepper 0.1 teaspoon
- Garlic 2 cloves
Step-by-Step Guide
Step 1
Cook the pasta until al dente, drain, and rinse under cold running water.
Step 2
For the dressing, combine all ingredients (except for the spinach, cheese, and pasta) in a large deep bowl and whisk lightly, then add the tomatoes.
Step 3
Add the pasta to the bowl with the tomatoes, then add the spinach and mix everything well.
Step 4
Chill in the refrigerator for 5–10 minutes.
Step 5
Before serving, sprinkle the pasta salad with cheese.
