Ingredients
- Olive Oil 2 tablespoons
- Grated Pecorino Pepato Cheese 0 oz
- Marinated cherries 10 oz
- Beef 20 oz
- Pesto 3 tablespoons
- Canned White Asparagus 5 oz
- Pistachios 0 oz
Step-by-Step Guide
Step 1
Pat the meat dry with a paper towel, then season generously with salt and pepper on both sides. Heat the oil in a large skillet over high heat and sear the meat for 5 minutes on each side for medium doneness (you can adjust the time based on your preference).
Step 2
In a small bowl, sprinkle the pesto with freshly ground black pepper and dilute it slightly with water to create a liquid dressing. Combine the salad greens (a large bunch), tomatoes, and artichokes in a large salad bowl, drizzle with most of the dressing, and toss.
Step 3
Transfer the meat from the skillet to a cutting board and let it rest for five minutes, then slice it into strips. Add the strips to the salad, drizzle with the remaining dressing, and if desired, add a bit more olive oil. Top the salad with pine nuts and Parmesan cheese. Serve immediately with crusty bread.
