Italian Duck Salad
Ingredients
- Duck Breast 1 piece
- Soy Sauce 1 teaspoon
- Dijon Mustard 1 teaspoon
- Potato 1 piece
- Spanish onions ½ head
- Microgreens 0 oz
- Lemon 1 wedge
- Toasted Sesame ½ teaspoon
- Ground Black Pepper to taste
- Ocean salt to taste
Step-by-Step Guide
Step 1
Remove the skin from the breast and chop it finely.
Step 2
Place the skin in a dry, hot skillet.
Step 3
Stir after 2 minutes.
Step 4
Fry until golden brown on all sides, then transfer to a plate.
Step 5
In the rendered fat, add the coarsely chopped breast and season with a little salt.
Step 6
Stir after 2 minutes and reduce the heat.
Step 7
After 2–3 minutes, pour in the soy sauce and add pepper, then stir.
Step 8
Add the mustard and mix. After 2 minutes, remove from heat and let cool.
Step 9
Place the diced tomato on a plate, add the sliced onion and microgreens. Season with salt.
Step 10
Place the duck in the center of the dish.
Step 11
Sprinkle with cracklings and sesame seeds.
Step 12
Drizzle with lemon juice.
