Description
Any vegetable in this salad can easily be replaced with chopped fennel, finely chopped fresh broccoli, yellow or red bell pepper, if desired.
Ingredients
- Carrot 3 pieces
- Courgette 2 pieces
- Radish 1 bunch
- Spanish onions ½ heads
- Olive Oil 2 spoons
- Mayonnaise 1 tablespoon
- Champagne Vinegar 1 tablespoon
- Dijon Mustard 1 tablespoon
- Fresh Mint to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Whisk together the vinegar, mustard, and mayonnaise until smooth. Gradually incorporate the olive oil, then season with salt and pepper.
Step 2
Grate the carrot using a coarse grater, finely chop the onion, slice the radish into thin rounds, and cut the zucchini into thin strips. Combine the vegetables and add fresh mint leaves. Dress with sauce and mix well.
