
Hot Sandwiches with Potatoes and Cheese

A great way to put yesterday's mashed potatoes to good use, especially if you have just enough left to spread on four slices of bread. The hot potatoes give the spread an interesting creamy and velvety flavor, while the cheese melts and bubbles into an appetizing crust. In short, this is one of those not-so-rare culinary situations where each individual component may not be that impressive, yet together they create harmony.
Ingredients
- French Baguette 1 piece
- Scallions 3 pieces
- Cardamom a pinch
- Mashed Potatoes 5 oz
- Chicken Egg 1 piece
- Hard Cheese 5 oz
- Sour Cream 2 spoons
- Mayonnaise 4 spoons
- Vegetable Oil to taste
- Dill 2 sprigs
- Fresh Mint 2 sprigs
- Salt to taste
Step-by-Step Guide
Step 1
Slice the bread.
Step 2
In the mashed potatoes, mix in sour cream, an egg, finely chopped green onions, cardamom, and stir well to avoid lumps.
Step 3
Grate the cheese, add mayonnaise, finely chopped dill and mint leaves. Taste and add salt if needed. Mix everything well.
Step 4
Spread a thick layer of puree on each slice of bread, then add a layer of cheese.
Step 5
Grease a baking sheet with sunflower oil and arrange the sandwiches on the sheet.
Step 6
Bake in a preheated oven at 180°C for 15 minutes.
