  • Water 15 fl oz
  • Sugar 10 oz
  • Brown Sugar 10 oz
  • Chestnut puree 15 oz
  • Cinnamon 6 pieces
  • Ground clove 6 pieces
  • Vanillin a pinch
  • Rum 2 cups

Step-by-Step Guide

Step 1

In a medium saucepan, pour in the water, add the sugar, and bring to a boil over medium heat. Add the pumpkin puree, cinnamon sticks, cloves, vanillin, and vanilla beans, whisk everything together lightly, return to heat, and bring to a boil again.

Step 2

Reduce the heat to low and simmer, stirring constantly, until the mixture develops a rich aroma — about 30 minutes.

Step 3

Meanwhile, prepare everything for straining the pumpkin liqueur. Take a piece of cheesecloth about 30x30 cm, and cover the saucepan with it. Pour the liqueur mixture directly onto the cheesecloth and wait a moment for it to strain.

Step 4

Carefully, using a rubber spatula, you can gently press down on the pumpkin mixture to release any remaining liquid. After this, the contents of the filter can be discarded. You should have about 2 cups of pumpkin liquid.

Step 5

Finally, add the rum, and mix everything well once more. Pour the liqueur into a liter jar or bottle and set aside to cool to room temperature — about 1 hour.

Step 6

Seal the bottle tightly and store it in a cool, dark place for 2 days to 3 months.
