Herring Under a Fur Coat
Salads • Soviet
Description
A classic of the Soviet appetizer table, a harmonious combination of sour, salty, bland, and sweet, all bound together with a mayonnaise handshake. The main focus here is the use of mayonnaise; it should be present everywhere but simultaneously nowhere. This is not a mayonnaise salad, but a salad that features mayonnaise. Jokes have been made about Herring Under a Fur Coat, yet people continued to eat it regardless. The classic Soviet recipe called for fatty lightly salted herring, which is hard to find today. Therefore, you can use regular barrel herring or salt fresh herring yourself.
