Description
A Greek street food. Part wrap, part sandwich; however, searching for genre boundaries here is pointless. Gyros is the Greek adaptation of the kebab theme, introduced in Greece by immigrants from Anatolia. It quickly developed its own national characteristics (for instance, instead of lamb, which is often used in the East, Greeks opted for pork, and of course, enhanced it with tzatziki sauce — arguably one of their main culinary treasures).
Ingredients
- Pork tenderloin 10 oz
- Olive Oil 5 fl oz
- Natural Yogurt 15 oz
- Garlic 3 cloves
- Lemon 1 piece
- Marjoram ½ spoons
- Cucumbers 4 pieces
- Tomatoes 2 pieces
- Spanish onions 1 head
- Parsley 0 oz
- Pita 4 pieces
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
Mix 70 g of yogurt, a tablespoon of oil, the juice of half a lemon, 2 cloves of grated garlic, paprika, marjoram, a tablespoon of salt, and pepper.
Step 3
Cut the pork into pieces about 3 cm thick, pound them, and coat with marinade. Cover with plastic wrap and refrigerate for at least one hour.
Step 4
For the sauce, peel two cucumbers, cut them in half, scoop out the seeds with a spoon, and grate them on a coarse grater. Transfer them to paper towels and squeeze to remove excess moisture.
Step 5
Combine the grated cucumbers with the remaining yogurt, 15 ml of lemon juice, a tablespoon of oil, a clove of grated garlic, half a teaspoon of salt, and black pepper.
Step 6
For the salad, dice the tomatoes and cucumbers, removing the seeds from both.
Step 7
Chop the onion and finely chop the parsley. Mix everything together.
Step 8
Preheat the grill, brush it with oil, and grill the marinated meat on both sides until nicely browned. About 4–5 minutes on each side. Slice the cooked meat into strips.
Step 9
Place all the prepared ingredients in the pita.
Step 10
Serve immediately.
