Ingredients

  • Olive Oil 5 fl oz
  • Radicchio Salad 2 heads
  • Garlic 3 cloves
  • Mustard Greens ½ teaspoon
  • Balsamic Vinegar 0 fl oz
  • Salt to taste
  • Ground Black Pepper to taste
  • Grated Pecorino Pepato Cheese to taste

Step-by-Step Guide

Step 1

In a blender, combine the vinegar, minced garlic, mustard, 1 teaspoon of salt, and a bit of black pepper. While blending, gradually add 75 ml of olive oil.

Step 2

Preheat the grill well.

Step 3

Cut each head of radicchio into 4 wedges lengthwise. Brush with olive oil and season with salt. Place on the grill and cook for a few minutes on all sides until slightly charred. Transfer to a cutting board and chop finely. Place in a bowl.

Step 4

Add the dressing and a bit of black pepper. Toss to combine.

Step 5

Serve warm or hot, sprinkled with Parmesan.
