
Grilled Pepper, Olive, and Sun-Dried Tomato Salad

This is a great salad to accompany grilled meats.
Ingredients
- Sweet Pepper 4 pieces
- Pitted olives ¼ cup
- Sun-Dried Tomatoes 5 oz
- Olive Oil 1 tablespoon
- Coarse Salt to taste
- Balsamic Vinegar 1 tablespoon
Step-by-Step Guide
Step 1
Preheat the grill or barbecue.
Step 2
Place the peppers whole or cut them into quarters and remove the seeds. Grill for about 5 minutes on each side until nearly soft. Cool and cut into medium pieces. Transfer to a bowl.
Step 3
Add halved olives, chopped tomatoes, olive oil, and vinegar. Season with salt and mix well.
