Ingredients
- Green lettuce 25 oz
- Olive Oil 8 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
- Pita bread 2 pieces
- White vinegar 3 tablespoons
- Chopped Tarragon Leaves 0 oz
- Shallot 1 head
- Dijon Mustard 1 teaspoon
- Cherry Tomatoes 5 oz
- Parsley leaves 0 oz
- Ricotta cheese 0 oz
Step-by-Step Guide
Step 1
Preheat the grill to medium heat. Lightly oil the grill grate. Toss the lettuce with 2 tablespoons of olive oil in a large bowl; season with salt and pepper. Brush the pita with 2 tablespoons of olive oil.
Step 2
Grill the lettuce (turning once) for about 2 minutes on each side until slightly charred on the outside but still firm inside; let cool, then tear into leaves. Meanwhile, grill the pita for about 1 minute on each side. Let cool, then break into small pieces.
Step 3
In a large bowl, mix the vinegar, tarragon, shallot, mustard, and the remaining 2 tablespoons of oil; season with salt and pepper. Add the lettuce, tomatoes, parsley, cheese, and pita; toss to combine.
